I had the pleasure of mentoring Pom, who had the brilliant vision to create Casa Myka from the ground up. Her goal was to master both sourdough and biga pizza techniques so she could choose the best fit for her business. Together, we sourced the ideal suppliers, focusing on finding the perfect flour, conducted numerous recipe tests, planned the kitchen setup, and developed seasonal menus.
