I’m an Italian pizza chef and consultant. I specialize in making sourdough pizza and guiding others through the A to Z of becoming pizza makers.

In 2014, my passion for baking ignited after attending a transformative pizza course in Italy, which opened my eyes to this incredible craft. From that moment, I began making pizzas almost daily, experimenting with different techniques to develop my own style. That same year in April, my girlfriend, Martina, and I made the exciting move from a small town near Bergamo to bustling London for a new adventure.

In 2015, while managing a pizzeria in central London, I created my first (and only) sourdough starter, Johnny. At the time, sourdough was still relatively unknown in the UK, so I taught myself everything I could, learning day by day. In June, Martina and I opened our first pop-up, "One n One Fashion n Pizza" on Old Street. It was a cozy, welcoming space where people could shop for independent brands while enjoying our traditional Italian sourdough pizza.

In 2017, we opened our permanent shop in Spitalfields, and in October, I began teaching "How to Make Sourdough Pizzas" through Airbnb Experiences. Meeting over a thousand pizza enthusiasts from around the world was incredible. I shared my pizza-making knowledge—and a piece of Johnny—with each one of them.

In 2020, I felt the urge to expand my reach and connect with even more people, so I launched my Instagram account, @theheartofpizza. I named it “The Heart of Pizza” because, for me, the dough—the heart of the pizza—is the most essential part of the process. You can have the finest toppings, but they mean little without a delicious base to support them. My mission is to empower people to create their own pizza recipes, giving them the skills and confidence they need.

Since 2022, after marrying Martina (my business partner and wife), we decided to embark on a new journey. One of our dreams was to travel the world while working, and that dream came to life when we landed our first client for my 1:1 Mentoring Program in Thailand. That experience has shaped what I do today: consulting, training, collaborating, and, of course, making sourdough pizzas worldwide. It's a tough job, but someone’s got to do it!
